Cooking dangerously

Red Velvet cake is *very* red......making it turned my fingers red.
Plus it had the oddest icing I've ever had - which was a butter cream icing with the addition of some flour cooked in milk and then left to cool before being stirred into the butter cream. Tasted fine but had a slightly gelatinous texture and was shiny and not entirely smooth. Odd, not unpleasant, just odd.
I do like to live dangerously when having people round for dinner - I'm not one for cooking old favourites - it's new recipes down the line. Hence the Red Velvet plus improvised duck. Which fortunately turned out well.....I think I like to stress myself out!! ;)
Still, now we head into the season of Christmas food - not so much trial and error there. (Although I am contemplating whether I can make some version of mincemeat with dried blueberries and cranberries - my dad can't have raisins/currants/sultanas because of his kidneys. Technically he probably shouldn't have any dried fruit at all - high potassium levels - but I was hoping that since fresh blueberries and cranberries are ok we might get away with it......shall continue to ponder.)

In which we upload a lot of photos......

Hello! And welcome to today's report on: Do I still have any eyebrows (or a place to live)?

The good news is, yes! To both questions! I have cooked a meal, I have not blown up my house trying to light methylated spirits, I have not burnt myself or anything and I have neither poisoned myself with meths or in general (well, insofar as I can tell so far.)

Here we have the story in full:
Here is my trangia set up - and because I'm a cheatery-mccheater-pants it's set up on my kitchen counter. Well, it's cold and dark outside.....and I didn't want my neighbours to call the police and report some strange figure setting fire to things at the back of my flats. Being arrested by the police wasn't high on my list of aims for the evening. In this picture you have the bonus views of my toaster and the pan I used for porridge this morning, in the sink, You're welcome!

Oooh looky! Here I have filled my fuel vessel with my meths and water mixture and lit it - with a looong match coz I'm a wuss. This vessel took nearly 100ml of meths plus 20ml of water. Diluting your meths at a ratio of 15-20% water to meths will prevent your pans and the burner holes on your fuel vessel getting all sooty. A saving on washing up and non-sooty fuel vessel holes makes for a more efficient burn - yay!
I opened my kitchen window once I had lit my trangia - it smelt a bit funny.
Oh look, here I forgot to take a picture of my water in the pan beneath these onions - well, that would be a dull picture; so, probably just as well.
Here are very finely chopped onions in some olive oil - coz I'm posh like that. I'm also a mean chopper, so I can chop my onions this small.....go me! My onions sat on top of my water the entire time I was waiting for my water to boil.....35 minutes!!!! Which is extreme - especially as the water never actually came to a rolling boil......tsk. After 35 minutes my onions were faintly warm and the oil was *just* beginning to sizzle a tiny bit.
Now, my water has finally come damn-near close to boiling so I got bored and put my pasta (fresh spinach pasta - did I mention the posh?) in and took it off the heat, and put it to one side with a lid on it. I figured that the heat in the water would be enough to soften and heat the pasta through and I was worried that if I didn't do something I'd be having pasta with raw onion for dinner. As soon as I removed the water pot and put the frying pan directly over the heat my onions started sizzling - see them sizzle? They're all in the middle because that's where the hot bit is.....
Well now, my onions are cooking so well that I've added the (fairly finely) chopped mushrooms and they're well on their way to getting nice and soft. In fact, any minute now I'm going to get carried away and add my salt and pepper and oregano. Always add your herbs before your liquids - then you get the nice smell of the herbs in your kitchen. Couldn't tell you if it makes it *taste* any better, but it doesn't make it taste any worse.......

Here we have further evidence of my mccheatery posh ways - instead of bog standard chopped tomatoes (which I do use frequently!) I've added some fancy Bertolli Pecorino cheese and garlic sauce - verrry fancy dinners here folks! It's bubbling away quite quickly now, so once it's heated through I'll put the pot of water and pasta back on the burner and put the frying pan back on top of that to keep it warm....you don't need a picture of that, do you?

This here, this is what you do while you wait for 35 minutes for your water to boil......you drink diet coke with lime (never buying *that* again - ick.) Sit next to an open box of chocolate chip cookies (huh, how did that come to be open.....?) And read your book - Elizabeth Moon in my case. And keep peeking to see if it's boiling yet. Which of course slows down the process because you've let the heat out from under the lid. Damn my impatience!

Gosh, but I'm bored of waiting now.....my pasta is looking pretty wibbly and steamy, even if it isn't boiling. A sample is taken and approved - in fact, it's a little mushy. Tut. So, off the heat it comes and the sauce is whipped back on to make sure it's nice and warm while the pasta is drained. Pasta is manouvered to plate and sauce applied - the end result is as follows:

Ta dah!
The finished product - I still have not died from eating it and it did not taste of meths. It tasted of pecorino cheese and garlic, and spinach pasta.
I cannot currently say I'm as good as a bronze DofE group since I didn't actually cook it outside - but I'm now one step ahead of the girls I'll be supervising at Saturday's cooking competition! Bonus!
And, no, noone ever called me a tidy cook - hence the stuff all over the counter-top.

The amount of meths lasted for an hour and 10 minutes. This is a *lot* longer than I was anticipating - however I *was* indoors in a fairly warm room. Quite frankly, I *dread* to think how long I would have waited for the water to heat up if I'd been outdoors.....

So, tune in tomorrow to see if I can be bothered to cook something else on the trangia - maybe I'll even take it outside! Maybe my neighbours will have a fit! Maybe I'll have to fight off London drunks desperate for my meths (unlikely) (I hope) You know you can't wait!

Melting

This holiday is temporarily interrupted by the desert from heaven.

Peach and Apricot Charlotte with honey ice-cream

Yeah, you're thinking - it's a desert - sounds good.

No no my friends, is *stupendously* delicious.

The crust round the outside it crisp and not too sweet; the peaches and apricots are hot and mushily soft but a little tart in flavour; the ice-cream is sweet and smooth and cold; add those all together in one mouthful......perfection. Your taste buds can't keep up!

And this rather extravagant dinner was due to the fact that it has been obscenely hot in York - despite the weather report saying it was going to be showery today - so we found the first damn restaurant with air conditioning and didn't even think about the price. So, thank you daddy for the money you gave me for my holidays - it bought me two hours in the cool and the perfectist desert ever......

Maelstrom

What do you do when you're hyperventillating over lunch, and your hair?
Seriously, I do not know what to do.
Not eat lunch because it's simply too difficult to decide what to eat - when I don't want anything anyway and I'm just thinking about it because it's 'lunchtime' and I'll probably end up with another headache later if I don't eat. I'm not saying that I'm not hungry - I have no idea if I'm hungry or not anymore. I often find myself eating if someone else puts it down in front of me even when I didn't think I was hungry. I *cannot* do anything if someone asks me what I want for dinner later - the answer is 'nothing' and if they suggest things then it makes me feel ill. Not sick - just, sort of sickened - like they've brought up some unspeakable topic. But I'll probably eat it if it's put in front of me. Or some of it. And yet I've still mananged to put back on all the weight I lost with the chemo in 2005. Which is depressing, because that was the one thing I brought away with me from that - at least I'd lost that weight that I could stand to lose.
Food has become the enemy again I suppose.
And I get tied up in a quandry of what *should* I eat, what *ought* I to eat. Lots of fibre and fruits and vegetables are the *shoulds* and *oughts* - which can prove a bad idea if my stomach is heading diarrhoea-wards. But not eating them isn't good for a body either - and mine will tell me in no uncertain terms. Seriously, if I could farm out my digestive tract to some other source, I bloody would.
And my hair, is so long now, and people say it's pretty and it probably is; but I can't even stand to wash it or myself most days. (which is pretty shameful) The room or the water or both is/are never the right temperature for whatever I am. Plus, what's the point of having nice hair when it spends all day and all night pulled back from my face and neck because it makes me hot and claustrophobic? But I'm scared to have it cut off again - which is silly, because it grows really fast anyway - I don't want the curls to go, I don't want to re-adapt to different hair again. And If I have it cut off I want someone one who knows how the hell to deal with ringletty, curly hair. I mean, is bloody brilliant, because there aren't as many people with curly hair out there as there are with straight hair; so it goes without saying that most hairdressers will have more experience with straighter hair. And what if I have it cut so it's not such a mess, then I'll have to stop being such a mess in my dress and everything else. It'll raise the stakes.
And this all seems so miniscule, so irreverant when there are so many worse things out in the world.
What the hell is happening to me? Why does this stuff that would once have hardly caught my attention seem like the end of the world? Why has this combination of things reduced me to standing at the back door hyperventilating? And what does it all mean anyway? beacause if it meant only what it is on the surface then I wouldn't be in a state about it so this has got to be about something else really. So tired now and I've barely been up today.

It's all Wicked!

Wow - the whole lack of NaBloPoMo meant that I could have my party yesterday and not have to blog about it on the same day whilst collapsing in a heap of tiredness......
It's great!!
It did go with a bang rather than a whimper, which is always gratifying. The mulled wine went down very nicely - no-one ate enough cake or mincepies: how can this be? I am at a loss to understand this issue.
We did have a few youngsters around which was lovely - at one point there were two little girls grovelling under my table - hunting a tiger, I was led to believe. I also got to listen to a very good rendition of 'Away in a manger' - with nearly all the right words. Apparently there is 'no crib for a star' in this version - and I was quite tickled at the idea of sleeping in a star..... :)

I finally tracked down mini candy-canes to go in my mini Christmas stockings; so I'm well pleased with that!

Tonight, I am going to the theatre too see 'Wicked'! Yay! I've been wanting to see this for ages - the only flaw in the plan are the 10 Guides who are going too......apparently there have been ructions and I'm just hoping we can all have a Nice Time this evening. I've got lots of back-up though (for which I'm super-nova-ly grateful!) - so hopefully all will Be Well.

Tomorrow - is homeopathic hospital day. I have High Hopes. I hope they won't be dashed.....

Blah, blah, looking a lot like Christmas etc.

Well, it's bakety, bakety bake here today....tomorrow is our Christmas Drink part-ay. Why, yes, that is quite early but I'm having fancy afternoon tea at Browns next Saturday. Which is jolly exciting if you spent lots of your early years reading Agatha Christie (like me) - Browns is where, and what she based 'At Bertrams Hotel' on. And the weekend after - I am,...doing nothing actually. But when we planned this I thought I might have gone to the States by then. So, this weekend it was. 35ish people will descend for an afternoon of mulled wine, Christmas cake, mince pies and other such festive things. Oh, and lots of crisps - one of us got a *little* carried away on the crisp-buying front. (and it wasn't me ;))
So, I have baked a cake today, marzipaned and am about to ice another, made cinnamon cut-out cookies, made orange/lemon sorbet (hoping it freezes by tonight - slightly wishful thinking I suspect).
I've also made the bed up in the spare room and am about to fish out the Christmas tree and decorations.
This entertaining lark is hard work!

Yum - cake....

This post is a rush today since I'm trying to get sorted for the 'off'. So I'm leaving you with pre-season Christmas photos - my cake (which is gradually being pickled in brandy) and the mince-pies that 'worked' (i.e. the ones I didn't scoff because the puff pastry over-puffed and ejected the mincemeat onto the baking sheet.....)
Salivate at will......
I know there'll be types out there that say 'not before Thanksgiving!' - but the cake really does need time to sit and rest and absorb......
What are you baking for Christmas/Thanksgiving?

Picture IDs

Well, few of you are biting on this one, so I'll give you the answer....
What do this and this have in common?

The answer is this: Yes, an overwhelmingly burnt piece of toast......

In the first picture you can just see the haze of smoke in the air, especially around the lamp. In the second, the vast amount of burntness that I scraped off before eating it. With whisky marmalade - why yes, I do have booze at breakfast ;)

What's the alternative?

Well, I whined a great deal about being 'too hot' last night and the result was that the referral letter to the Royal London Homeopathic Hospital's Complementary Cancer Care Programme finally arrived. How's that for a result?!
4th December I will meet Dr Sosie Kassab; or, at least, one of her team. She's been recommended (and I've been referred by) my oncologist - and she's not one to suffer fools gladly. Any praise or recommendation from her I'll grab with both hands.
I'm also going back to the London Haven; partly because I need to something to get up for on most days and partly because I guess I need a bit more TLC. Maybe I can sleep whilst I'm there ;)

This takes us into the tricky area of do I really believe these things work - I think there's a lot of evidence (medical) for the potential effectiveness of homeopathy, so I shall be interested to see what happens there. Of course, I'm also at a point of such desperation with it that if someone told me to stand on one leg for half an hour a day and then turn around three times and touch the ground whilst saying 'I believe in cancer-fairies' - I'd do it. I actually don't care what it is if it works. Well, within reason. I admit, I'm somewhat more sceptical about things like Reflexology and Reiki (to name two that I actually have experience of). I don't really see how they work or why they should. In both cases I enjoyed them - an hour to just relax and lay somewhere whilst someone is sympathetic about what you're going through. Plus with the reflexology - a foot massage. What's not good about that? Do I believe that that the foot massage moves the toxins out of other bits of my body? I dunno - I don't understand how it would but maybe I just don't know enough about it.....
The reiki - that was odd - I think I just snoozed my way through it really. I did have an odd experience of a sudden start in my body and a white light even when my eyes were closed. But I think that might just have been me falling asleep......
The one thing I really do need to avoid are the 'food facists' - I do believe that a healthy diet is important - and I'm pretty good when I'm not feeling too depressed; but I won't be lectured about 'acid ash' and the 'deadly dairy'. Perhaps that work for some people but it just makes me feel miserable, useless (because I can't stick to that sort of diet) and pissed off. Frankly, there's not much point saving this life if I'm going to spend it feeling miserable and guilty about food.
So there, now!

I'm actually loathe to ask you any questions about this for fear of grave recriminations - but, share your thoughts or experiences if you're so minded......

Green, green, green - it used to be my favourite color

So, have you heard the one about sugar feeding cancer cells; so apparently you shouldn't eat sugar?

And have you heard the one about dairy being full of hormones and fat that increase your risk of cancer; so apparently you shouldn't eat dairy products?

And, have you heard the one about 'acid ash' - foods that make your body 'acidic' and therefore make you get cancer; so don't eat any of them?

And then there are the free radicals (apparently they're not a political party, who knew?)

Then there's the whole wheat - no-wheat dilemma. Fibre: good, BUT - apparently even whole-wheat isn't a whole grain....so, other grains are better, aren't they?

Alcohol? Don't make me laugh! Heard the one about "a group of scientists who analysed almost 100 previous studies [and] found that every daily alcoholic drink increases a woman’s breast cancer risk by 10%"? (Key, J., et al., Meta-analysis of Studies of Alcohol and Breast Cancer with Consideration of the Methodological Issues. Cancer Causes Control, 2006. 17(6): p. 759-770)

Oh, and meat - apparently meat feeds cancer cells too. So, better give that up - and you've given up dairy too so you're heading for veganism now. (not that there's anything wrong with being a vegan in and of itself)

So, what to eat?

Broccoli is about as far as I've gotten. Yum. Endless broccoli.

I get this far and I'm totally perplexed. I can't follow all these diets; I just can't. I'll be miserable and grumpy all the time - and what's the point in being alive if the life I end up with is one where I'm miserable and grumpy?

Oh, and I left out the juicing and seeds, or juicing seeds, or something. Not fruit. Beetroots and carrots etc.

Did I mention the being miserable and grumpy? Because now I feel guilty virtually every time I eat anything - which makes me want to rebel and eat lots of really crap food.

Now - broccoli juice anyone?

The big 100

Hey, yesterday was my 100th post!
I didn't even notice!
Howzat?!I didn't even know until now that there was a "Colossal Meal Replacement Bar" called the Big100 - but now I do! And so do you!

Actually, I didn't even know there was such a thing as a "Colossal Meal Replacement Bar" - and I'm really impressed that it's colossal.....I'd hate it to be all minuscule! ;) It's too bad I shall never be a muscle-bound babe now - no weight-lifting for me - all that lymphoedema fear and caution, you know.... So, I'll never have occasion to eat a Big100 - shame, they come in tempting flavours too: Apple pie, cookie dough, graham cracker - don't you just want to be a weight-lifter type person now?

Actually, to digress, that's one of the things you can't get in this country: Graham crackers (or plain Cheerios, or Annie's Mac 'n' Cheese - or Bernie Bunny as we refer to it in our household) Seems so silly, doesn't it? I also miss serious ice cream flavours - black raspberry, maple walnut, peppermint stick....mmmmm - yum. Also, no one here knows what jimmies are. And you can't get a raspberry-lime rickey. I must stop now - I'm getting a sugar high without having even eaten these things......

mmmmm - ice cream - what's your favourite flavour?
